The Bourbon Elite variety, planted over 100 years ago by Diego Baraona’s forefathers, is a testament to resilience and tradition. This coffee represents the unique history of El Salvador’s coffee industry, offering unparalleled sweetness and a clean, crisp flavor.

    A Legacy of Resilience: Planted over a century ago, these original Bourbon Elite trees are a direct mutation of Typica. While many farms replaced them due to rust challenges, Diego Baraona has preserved them to protect his family's heritage.
  • Sun Symbol
    Exceptional Usulután Terroir: Cultivated at 1,450 MASL in the rich soils of Usulután, El Salvador, this variety is renowned for an unparalleled toffee-like sweetness balanced by a light, apple-like acidity.
  • Water Symbol
    Innovative Mechanical Washing: This lot undergoes a meticulous washing process using a mechanical demucilager, which uses centrifugal force instead of traditional fermentation to remove the mucilage, yielding an incredibly clean cup.

The Story of Bourbon Elite

After the specialized washing process, the beans are slowly dried on raised beds for 10–14 days and rested in hermetically sealed bags for three months. This careful handling results in a clean, consistent flavor profile that highlights a rich, buttery body and pays true homage to its historic Central American origins.
