The name stems from the intensity of the temperature during fermentation. In the controlled environment of the greenhouse, this process lasts 72 hours, after which the coffee is taken out of the rolled-up plastic and dried on raised beds inside the greenhouse for 15 days. The farmer happily agreed – without mentioning that exporting seeds is actually restricted by Ethiopian law to protect its coffee heritage.\u003c\/p\u003e\n\u003cp\u003eThe coffee made it safely to the airport, and only later did Bram learn this wasn’t really allowed. Had he known, he would never have taken them – but at that point, the seeds had already travelled. Before planting them on his own farm, the seeds needed to be developed, and for that Bram turned to his good friend Diego Robelo at Aquiares in Turrialba, Costa Rica.\u003c\/p\u003e\n\u003cp\u003eDiego, a master of nurseries and seedlings, grafted the delicate Ethiopian plants onto strong Robusta rootstock to give them vigor and resilience. He also planted some of these trees at Aquiares itself. Introduced at Aquiares in 2013 is quickly became evident that this cultivar had tremendous potential for the farm. Fast-forward twelve years and slowly but surely the full farm is being replanted with mainly Centroamericano cultivars. \u003c\/p\u003e\n\u003cp\u003eThe combination of yield, quality and resilience to climate make it Diego's favorite cultivar.
